West Asia tensions push hospitality sector to explore LPG-free kitchens

Bengaluru, March 11 (UNI) Concerns over possible disruptions in commercial LPG supplies amid escalating tensions in West Asia are prompting India’s hospitality sector to explore LPG-free, flame-free induction kitchens as a more reliable and efficient alternative for large-scale cooking operations.
Highlighting the growing dependence of restaurants, resorts, catering units, cloud kitchens and institutional kitchens on LPG cylinders, Dr S N Chandra Mouli, Director of Lorman Kitchen Equipments Pvt Ltd, said any interruption in fuel availability can immediately affect kitchen productivity and service continuity.
He noted that global energy uncertainties linked to developments in West Asia have renewed discussions within the hospitality industry about the need for alternative cooking technologies that reduce reliance on LPG-based systems.
According to Dr Mouli, modern commercial induction cooking technology offers a long-term solution by enabling kitchens to operate completely without LPG cylinders or gas pipelines. Induction-based commercial kitchens function without open flames and combustion gases, while also generating significantly less ambient heat, creating a safer and more comfortable working environment for kitchen staff.
He said induction systems offer several operational advantages for high-volume kitchens such as restaurants, resorts, catering facilities, cloud kitchens and institutional food production units. These systems are designed for precise temperature control, improved cooking consistency and higher energy efficiency, while also being easy to operate and suitable for kitchens of varying sizes.
Dr Mouli further pointed out that induction-based commercial kitchens can deliver substantial economic benefits when properly designed, with energy consumption potentially up to 60 percent more economical compared to conventional LPG-based cooking systems. Faster heating and improved heat utilisation also contribute to greater kitchen efficiency, he added.
