Rosogolla pronounced as ‘raw-show-golla – a very popular Bengali sweet

By Biswamoy Mukherjee Kolkata, Jul 17 (UNI) Rosogolla pronounced as ‘raw-show-golla’ or Rasgulla – a very popular Bengali sweet, which is soft, Juicy and Spongy made from milk and the most popular sweet delicacy in Kolkata as well as rest of India and the world. Rosogolla is a sweet which is not only famous among the Bengalis but is equally popular among the non-Bengalis. The delicacy has put India on the global food map. Rosogolla is a syrupy sweet of Bengal and Orissa. It is mainly prepared by kneading chhena and a small amount of semilina. These are rolled into small balls, and then boiled in light syrup made of sugar. This is done until the sugar enters the balls. From the bylanes of Kolkata and the temples of Puri to the power corridors of Rashtrapati Bhawan, Rasgulla remains one of India’s best-loved culinary inventions. Rosogolla defines a Bengali character as well as Bengali talent. Bengalis are supposed to possess sweet voices and they sing well – probably because of Rosogolla. Evidence indeed suggests that most of the greatest singers and composers in the Indian music industry specially the Hindi film industry are all Bengalis starting from the legendary Kishore Kumar, RD Burman, Salil Chowdhury, Manna De to today’s singers like Kumar Shaanu, Abhijit, Shaan, Shreya Ghoshal, Monali Thakur and many others. The Bengali language is very soft and flexible, again you guess it right – because of Roshogolla! Half a million Bengali girls have nicknames like Mishti, Mithi, Mithu etc and all these are Bengali terms meaning Sweets or Sweetness. It is believed that Rosogolla was invented in Bengal where it was considered to be a traditional sweet. Nobin Das, who was a confectioner in Kolkata, is considered as the father of rosogolla. He is famously known as “Rosogolla’s Columbus”. But by the time Nobin Das introduced rasgulla to Kolkata, it had already become a traditional sweet of Orissa, in the cities of Bhubaneswar and Puri.
